Vegetarian Bolognese with Mushrooms

  • 1 bag Al Dente pasta fettuccine or pappardelle
  • 3 tbsp olive oil
  • 1 lb sliced mushrooms
  • 1 jar Marinara Sauce
  • Parmesan cheese for garnish
  • Salt and pepper to taste


  • Saute mushrooms in 3 Tbsp. olive oil, until carmelized, 10 minutes. Add salt and pepper, to taste. Add jar of sauce to skillet. Cover.
  • While sauce simmers, cook Al Dente Pasta for just 3 minutes. Drain pasta and toss with sauce.
  • Serve family style. Top with parmesan cheese, if desired.
