Green pea pasta with tuna


  • 1 bag Green Pea pasta
  • 2 cups grape tomatoes
  • 3 cloves garlic minced
  • 16 oz cauliflower chopped
  • 2 5 oz cans tuna in olive oil don't drain
  • 1/4 cup olive oil
  • 2 tbsp lemon juice


  • Cook the green pea pasta according to package directions. One minute before the pasta is ready, add the peas to the water. Reserve 1/2 cup pasta water. Drain the pasta and peas.
  • Meanwhile, in a pan, heat the olive oil on medium heat. Add the minced garlic and cook for 2 minutes, stirring often. Add the cauliflower and cook for 3 minutes. Add the tuna, break it up with a wooden spoon, and cook for 2 more minutes. Remove from heat and stir in the lemon juice.
  • Toss the cooked pasta with peas with the tuna and tomatoes. Add pasta water if needed. Season with salt and pepper. Enjoy!
