vegetarian bolognese

Substitute any vegetables of choice for the mushrooms for example, zucchini, kale, or spinach. To make a meat sauce, saute one pound of ground beef or turkey meat until cooked through, before adding sauce.

Ingredients

  • 1 bag Al Dente Pasta
  • 3 Tbsp olive oil
  • 1 lb. mushrooms, sliced
  • 1 jar Monique's™ Marvelous Marinara
  • Parmesan cheese for garnish (optional)
  • salt and pepper to taste

Directions

Saute mushrooms in 3 Tbsp. olive oil, until carmelized, 10 minutes. Add salt and pepper, to taste.  Add jar of sauce to skillet.  Cover.  While sauce simmers, cook Al Dente Pasta for just 3minutes.  Drain pasta and toss with sauce.  Serve family style.  Top with parmesan cheese, if desired.
