famous curry pasta salad

This recipe has been in our repertoire since 1982, but it still is as contemporary as a pasta dish could be. Always a hit at a picnic or potluck.

Ingredients

  • 1 bag Al Dente® pasta, any flavor or cut
  • 2 cups cauliflower, parboiled for 3 minutes
  • 10 oz. frozen peas, thawed and drained
  • 1 cup sliced almonds, toasted
  • 1/3 cup raisins or currants
  • 1 tsp curry powder
  • 1/2 cup olive oil or vegetable
  • 2 Tbsp. Mango Chutney
  • 1 tsp. garlic minced
  • 1 Tbsp. Dijon mustard
  • 1 tsp. salt
  • 1 dash cayenne pepper

Directions

 

Combine all dressing ingredients, whisking until smooth. Cook pasta for 3 minutes and rinse with cold water. Toss pasta, dressing and all other ingredients. Serve at room temperature.
