dennis’ veggie & chicken sausage ragu

This recipe is on the Garlic Herb Pappardelle package. In Italian, parpare means "to gobble" and that's what I predict you'll be doing with our new Pappardelle Pasta. Each super wide, delectable noodle is made to hold the robust flavor of a ragu, stew or chunky veggie sauce.

  • 1 12 oz bag Al Dente Pasta®
  • 2 Tbsp. olive oil
  • 1 small onion, chopped (1/2 to 2/3 cup)
  • 2 carrots, peeled and small dice
  • 2 zucchini, small dice
  • 1 red bell pepper, small dice
  • 1 lb chicken sausage, sliced
  • 1 Tbsp. flour
  • 8 oz chicken broth
  • 1/2 c white wine
  • salt and pepper, to taste


Bring large pot of water to a boil.  Add salt.   Cook Al Dente Pappardelle, testing after 3 minutes.  May need another minute to reach tender yet firm perfection.  In another pan, saute carrots in olive oil.  After 2 minutes, add onions, then red pepper and zucchini.  Season with salt & pepper.  Add the chicken sausage and cook until heated through.  Sprinkle with flour, stirring.  Add wine and bring to a boil, then add broth and bring to a boil.  Garnish with parmesan and fresh parsley.
