Spinach Fettuccine Primavera

This is the recipe to use when you have lots of vegetables around the house. Any combination would work, any fresh herb makes the flavors pop, and it's all tied together in a delicious light lemon sauce.

  • 1 bag Al Dente Pasta
  • 3 Tbsp olive oil
  • 2 cloves garlic, minced
  • 1 small yellow squash, cut into matchsticks
  • 8 oz asparagus, trimmed and cut into 1 inch pieces
  • 1/2 red pepper, cut into matchsticks
  • 4 oz green beans, cut in bitesized pieces
  • 1 c cherry tomatoes, halved
  • 1/2 onion, sliced thin
  • 2 Tbsp lemon juice, 1 tsp lemon rind, grated if desired
  • 1 tsp, fresh herb, we used thyme


Cook pasta according to package directions, just 3 minutes.  Heat oil in a large skillet over medium high heat  Add onions and sauté 2 minutes, add garlic, sauté briefly, add all other veggies and cook 5 minutes until tender.  Drain pasta and toss with the sautéed vegetables.   Add 1 tsp fresh herb, you could use anything you like, we used thyme.   Season with salt and pepper and garnish with lemon rind if desired.
