pasta salad nicoise

Here's a great dish that does double duty: it can be dinner tonight and lunch tomorrow. It's delicious served slightly warm or chilled. For the best taste and texture use white albacore tuna packed in oil. It's much better than the chunk light in water.

  • 1 large can tuna fish, drained
  • 3 tomatoes, chopped
  • 1/2 lb. green beans, blanched in boiling water until tender
  • 3 scallions, chopped
  • 1 cup black olives, sliced
  • 1 Tbsp. capers (optional)
  • 12 oz. 1 bag Al Dente® Pasta, any flavor or cut
  • 1/4 cup vinegar (red or balsamic)
  • 1/2 cup olive oil
  • 1 Tbsp. Dijon mustard
  • 1/2 cup chopped parsley
  • salt and pepper


Whisk together the vinegar, mustard, and seasonings.  Add any other herbs or seasonings that you may enjoy, for example fresh herbs or garlic.   Slowly add the oil until combined.  Cook Al Dente® Pasta as directed for 3 minutes.  Drain well and rinse in cold water.  Combine pasta with dressing and all other ingredients.  Season to taste.  Refrigerate.
